I just pulled this 9lb Pork Butt off of the smoker. It went on at 8pm yesterday.
After being wrapped in foil, I'll put it in a repurposed Omaha Steaks shipping container to stay warm.
It's lunch for a few friends who are coming out to cut wood and shoot guns.

Thanks Charlie.
Anything we didn't eat, went home with the guys. They all live in apartments or condos in the city where smokers and in some places grills are taboo. They like to come out a couple times a year, to do man stuff and eat man food.

I gotta explore that whole dry aged thing. I believe it makes a significant improvement -- am I right?
Here's a couple pics of a strip shell that I just pulled out and cut up after dry aging for 14 days.. I have another that I started the same time, that's going for another week.

Ready to cut into steaks.

I'll do a final trim as I vacuum pack.
This was an 12lb choice grade shell at $5.49lb. from Sam's club.

Tried to smoke a turkey breast in the smoker. Sat. with not much time to do it, It is not to bad I guess. At least we can eat it! Maybe!

I've smoked quite a few meats. Turkey is not one of my favorites to smoke. I was asked the last few years if I would smoke some turkeys -- I said immediately NO. (Bear in mind my big smoker requires a lot of attention while cooking -- tending the fire/coals etc). The threshold for me in getting the meat right versus the possibility of it getting dry is a deal-breaker. I have been reading and looking at some new recipes -- and a friend of mine has been giving me some tips. As for now I'm on hold with turkey.

I do understand that. As I won't be smoking turkeys many times, if I can help it.

The Beast arrived a little while ago. Obviously from the pic, the grills/smokers in the background, I need this MF’r like I need a hole in my head! I’ve had a couple of gas grills in the past years for the ‘hell with cranking up charcoal/quick grill’ idea, but I wanted another one...and I wanted a damn good one. I couldn’t get the previous gas grills to last more than 2-3 yrs at best, replacing burner plates, etc every year, and both were Brinkmann’s from yrs ago, built outta decent gauge metal.

This is a Weber Genesis II LX, 6-burner with the GS4 system high output/steak searing system, lighted knobs and handle lights that activate when the lid is picked up for the interior for whatcha grillin’, tank gauges, stainless grates, flavorizer bars, etc, etc. Two inches shy of 1,000 total sq inches of grilling surface. 84K total BTU’s...72K in the main, 12K on the side burner. I promise you what you see in the pics, weighs 300 lbs at least, by itself... solid as a tank! And I’ve got to add the left wing, and right 12K btu side burner wing. Little over 6 feet long when the left/right wings are attached.

Merry Christmas from me, to me...I guess! I’m gonna test the limits of this machine with its’ 10-yr warranty on some stuff, lifetime warranty on the rest. I’ll get it put together either this evening or tomorrow after work. We shall see what this thing will do fellas...I’m gonna test the hell out of it, and let’s see if the rave reviews of this machine can stand up!

Navy son and college daughter will be here tomorrow for the Christmas holidays. I’m gonna get it cleaned up and a good oiled, wiped-down burn in...it’ll see action this Sat for a get together here for my son and daughter...gonna do about 75 flanken-style beef short ribs on this thing, while four seasoned, whole yardbirds smoke on theTraeger Pro 34.

Excellent choice Jason. I have a smaller Genesis that I've had for around five years now. It's a great grill. No issues at all. I use mine for grilling, roasting, steaming and in a pinch, I've used it as a smoker, although keeping the temp under 250* is a challenge. The convenience factor can't be beat.
You'll be pleased.

Victorionox knives? There great and love them curved cimenters for fillet boning and triming.hadnt been able to smoke as much with the injuries but soon enough my friend.soon enough

Black one away after 16 years to a buddy.it needed a crossover bar a drip tray and a new igniter.i just bought a stainless 3 burner this summer once you buy a weber it will be last gas grill you ever buy.there worth the extra money .the cook so evenly you will love it. Fyi your porch lookks like mine. I have treager the weber and a w burner fryer camp chef on back porch

Black one away after 16 years to a buddy.it needed a crossover bar a drip tray and a new igniter.i just bought a stainless 3 burner this summer once you buy a weber it will be last gas grill you ever buy.there worth the extra money .the cook so evenly you will love it. Fyi your porch lookks like mine. I have treager the weber and a w burner fryer camp chef on back porch
The Camp Chef's are nice...I've got a 90K BTU, Pro 90 3-burner in the shop with wind screen and fold out tables on both ends! It's damn nice with the full griddle (solid steel griddle weighs about 50 lbs if I'm not mistaken) covering all three burners...can sling some serious breakfast with it and does damn good for burgers/dogs, chops, etc!
